Cobb Salad

Cobb-Salad

The weather is warmer these days and there is something about a salad that works for dinner on a warm night.  I can’t say that I wouldn’t just want to eat a burger or something on the grill, and we’ll do that soon on here, but a big salad (cue the Seinfeld references) sometimes does the job.

This one includes hard boiled eggs, avocado, bacon, tomato (yes, just a touch so don’t worry), crumbled blue cheese, and bib lettuce.

I love using the avocado dressing on here.  It adds just a bit of creamy texture without going overboard on acid or carbs.
